The Chi Chi is a simple variation on the classic Piña Colada, with vodka as the base spirit rather than the traditional white rum. I call this one a Passionfruit Chi Chi because 42 Below Passion Vodka is the backbone of the drink. Give this one a go with other flavoured vodkas, you might just make something delicious.
- 60 ml 42 Below Passion Vodka
- 30 ml Coconut Cream
- 120 ml Pineapple Juice
- 1 cup Ice
- Pineapple slice for garnish
Add all ingredients to a blender and blend until smooth. If you’re worried your blender won’t be able to handle it, crack the ice up a bit by putting it in a tea towel and smashing it with a rolling pin. Pour into your glass of choice and garnish with a nice big slice of pineapple.
