I’m finishing the tiki series strong with a big ol’ punch bowl. Named after the area where it was first made, this one combines vodka and sparkling wine with sweet juices and fresh fruit for a deliciously tropical large-format cocktail.

Here’s an easy recipe for making a Bay of Islands Fish Bowl at home.

Ingredients

  • 1-litre Vodka
  • 2-litres Pineapple Juice
  • 250 ml Cranberry Juice
  • 700 ml Sparkling Wine
  • Slices of Pineapple, whole raspberries and lemon wheels to garnish

Method

Add the vodka, pineapple juice and cranberry juice to a large punch bowl. Add in a little bit of ice and refrigerate for a couple of hours so that the flavours combine. When you are ready to serve, add a decent amount of ice, top with sparkling wine and garnish with fresh fruit.

Garnish each glass separately with a pineapple wedge and use a ladle to serve.
