I put a very Kiwi spin on the classic Ramos Gin Fizz. Pavlova is an egg white based cake, similar to meringue, that is super popular in NZ.
The first Ramos Gin Fizz I had reminded me of the taste of a pavlova so I decided to incorporate the fruits that commonly sit on top of the cake into this variation. The fruity nature of the Light House Gin worked perfectly in this recipe.
Here’s how to make a Pavlova Ramos Gin Fizz at home.
Ingredients
- 60 ml Gin
- 15 ml Lemon Juice
- 15 ml Kiwifruit Juice
- 7.5 ml Lime Juice
- 2 Strawberries
- 22.5 ml Simple Syrup (2:1)
- 3 drops Vanilla Extract
- 1 Egg White
- 30 ml Cream
- Soda water to top
- Kiwifruit and strawberry slices to garnish
Method
Muddle the strawberries in the base of your shaker. Add all the other ingredients except soda water and shake over ice. Strain back into your shaker for a reverse dry shake (without ice). Strain into a collins glass with no ice and top with soda. Garnish with a very thin slice of kiwifruit and strawberry.
